These recipes sound very scrummy.  I didn't think that there could be so many different ways of making pastry taste so delicious  :)  :).  They're all great ideas, I'm going to give them a try.

Thanks for the ideas folks. It's my job to make the pies at Chrimbo and I've only ever used shop bought pastry  :o
Oh the shame of it. I think I'll try it from scratch this year - looks straightforward. I'll let you know.
Still thinking

Well Boris, I have to admit to cheating this time also....I popped into Sainsburys to get some lard and lemons and noticed there sweet dessert pastry, all ready made, so that also ended up in my basket.  Used it tonite, and very nice it was!!!!  Just what I wanted, sweet, short, crumble yet firm.  Now to have a go at making my own!!

I have used Sainsburys sweet dessert pastry too and found it made lovely mince pies, I should have put it on my earlier posting.  Glad you enjoyed them.

Found it...

For 24 mince pies:

275g (10oz) plain flour
25g (1oz) ground almonds
175g (6oz) butter
75g (3oz) castor sugar
rind of half lemon
1 egg yolk
3tblspn milk

Just wanted to say that I tried out this recipe as it was my first time making mince pies and I didn't no where to begin with the pastry and it was delicious, thanx a lot tulippa  :D

I tried my first Oil Pastry, replacing the hard fats with grape seed oil. Quite tasty really, very short and crumbly. Certainly worth a go.
