Best buttery biscuit recipe?

I'm expecting visitors for tea and would like to make home-made biscuits, straight from the fridge.

I want to have dough ready in the fridge! So looking for the sort of biscuit where you make the dough into a 'log' and put in the fridge, then cut into rounds and put onto a baking sheet when you want to bake a few.  Preferred plain; ingredients could include flour, oatmeal, sugar, nuts (including peanuts), butter but no fancy bits, fruit, icing or spices.

Does anyone have a tried and tested recipe please?

Try this basic shortbread recipe, this is for a large quantity so you can cut down accordingly:

500g butter [softened to room temp]
250g caster sugar
650g plain flour
1 1/2 tsp vanilla extract

Beat butter and sugar together until soft, smooth and just combined,
Add flour and vanilla and beat until mixture forms a stiff dough [this is the stage you can put it in the fridge covered in cling film]
Roll out into required shapes 5-7mm thick
Bake for about 15 mins [gas mark 2] until form and pale golden.

This is the butteriest recipe ever, I love the vanilla but it also good with the grated rind and small amount of lemon juice.

That sounds easy happycatz- I used to substitute a small amount of cornflour for flour to make the shortbread even shorter. Do you think that would be ok in the fridge too?

Nutty Cookies

6oz Margarine                       8oz SR Flour
8oz Brown Sugar                   2oz Bran
1 Egg                                     2oz Chopped Hazelnuts

Cream marg and sugar, add egg and beat well. Stir in flour, bran and hazelnuts. place on floured board and knead until smooth. Divide in half and make each half into roll 8" long. Wrap in greaseproof paper and chill. Cut into 1/4" slices and put onto ungreased trays. Bake at 220oC for 7-10 mins.

Those nutty cookies sound delicious, will definitely have a go at them.  Am always glad to find new recipes ;D

Tin Can, have read about substituting normal flour for cornflour before and I am sure that this would be just fine to go in the fridge but not tried it myself :)

Nut one is chilling in a sausage in the fridge - we had oat bran, so used that. Will make the shorties for visit to London on Friday. I have to make samples before serving up to guests, you understand ...

Oh how I long for one of those Sarah, I have been soooooo good for a whole week. But hey, visitors this weekend, I should really make some in readiness and test them....................... ::)

They look good, hope they were tasty ;D
I usually cut mine out with a scone cutter and sprinkle with icing sugar,
put's me in the mood for some baking ;)
