What is the proprietary name for Potato Flour/Starch??

That's what we call it here in France - thought it was just a French name though.   ???  Maybe its the same in the UK.

I always think of both potato flour & potato starch as farina despite the fact they are completely different products with different uses.

A step nearer, but not the name I was after.

And I did not realise that farina could be made from potatoes.

Or that starch is a different thing. Learning!

Sorry - just looked it up.  Arrowroot comes from tubers but not spuds.

Potato flour actually tastes of potato, potato starch on the other hand has no taste, it is more like cornstarch(cornflour)

Potato starch, slightly unsurprisingly, is made from potato starch whereas potato flour is made from the whole potato. Brands? Haven't a clue.

Not really - I know that the starch is used in proprietary products, but I have only used the flour.

I give up. It was just an exercise in getting back that everyday brand name that now eludes me.

As you're thinking years back, what about the old manufacturers of gravy salt (remember that?)...Burdells & Comptons, I think....any chance they also made your potato whatsit?

Potato starch is not limited to just being a thickening agent. If potato starch is used in baking it gives a lighter texture without affecting the flavour whereas potato flour gives a heavier texture & can quite drastically affect the flavour.
