Rum and Raisin Cheesecake

Does anyone have a recipe for Rum and Raisin Chessecake?  I had it in a restaurant years ago but have never seen a recipe for it.  It was delicious!

Baked Rum and Raisin Cheesecake recipe
ingredients
3 oz (75 g) raisins
75 ml (5 tbsp) rum
2 cups (225 g) 8 oz self-raising flour
1 level tsp (5 ml) Bicarbonate of soda (Baking soda)
1 level tsp (5 ml) cream of tartar
3/4 stick (6 Tbsp) 75 g butter
grated rind of 1 lemon
5 fl oz (142 ml) soured cream
125 g (4 oz) cottage cheese
125 g (4 oz) full fat soft cheese
2 eggs, separated
1/4 cup (50 g) 2 oz caster sugar (superfine granulated)
2/3 cup (150 ml) 1/4 pt fresh double cream (heavy cream)



method
1. Put the raisins and rum in a saucepan and bring to the boil. Remove from the heat and leave to cool.

2. Sift the flour, bicarbonate of soda and cream of tartar into a bowl, then rub in the butter. Add the lemon rind. Bind to a smooth dough with the soured cream.

3. Butter a 25.5 cm (10 inch) flan dish and line with the dough.

4. Beat together the cottage and full fat soft cheeses, then stir in the rum and raisins.

5. Whisk the egg yolks and caster sugar together in a bowl until pale and fluffy. Still whisking, add the fresh cream, and continue until mixture is stiff. Fold into rum and raisin mixture.

6. Whisk the egg whites until stiff then fold into the mixture. Pour into the prepared pastry case and bake in the oven at 180c (350f) mark 4 for about 1 hour. Turn off heat and leave to cool in oven for 15 minutes.

Serve warm or cold.

I actually groaned when I read this recipe  ;D  Butter, double cream, cottage cheese, full fat cheese, sugar  ;D

I have such a spare tyre at the moment and I think I'll soon have another  ;D

Many thanks for the recipe.....  i think!  It does sound like a coronary dressed up as a cheesecake, but isn't that what special desserts are all about!  If we ate them everyday it would be different but a little of what you fancy every so often does you the world of good!

Now all I need is to invite some people round so I have an excuse to make it.....  :D

I almost purposely didn't read the ingredients!  Baked cheesecakes are in my humble opinion...food of the gods!

I have made a Vanilla one a few times which  is lovely but it didn't have that certain something to lift it into the realms of legend.

I have to say that this forum is most splendid, chanced upon it yesterday whilst looking for something to do with the very large bag of greengages I have, but after reading a few posts I knew that this would be the place for the R&R Cheesecake recipe.

Are you up to another dumb question or should I start a new thread?

ok - here goes!

How do you sterilise jars for making jam and preserves?  Can you do them in the microwave?  I may even have my old m/wave steriliser from when my son was a baby, could that be of any use?

Dumb questions probably, but it's these greengages i have got to use up!

Rum and chocolate you say.......  :P  ::)  :P

I stick mine in the oven gas 1 for I don't know how long!! Tonight for the chutney about 20 mins, find it easy, will post that choc cheesecake recipe when I have a mo!

I stick my jars in the dishwasher - gets to 90C. If I don't use them straightaway, I do the oven trick while boiling my jam etc.  so that the jars are hot when you put the jam in and there's less of a chance of them exploding.

If I only have a few to do - invariably strawberry or blackcurrant jams! -I do mine in the microwave, put a spoonful of water in the bottom and blast them with the steam.

When I have a lot they go in the oven. - usually chutneys and marmalade oh and plum jam, always loads of plums.

sniff...I don't have a dishwasher.  :'(

Is it true that you can cook whole fish in them?

Dishwasher, or wash well with soapy water, rinse very well, dry, and put in the oven on the lowest setting until the jam is ready.  The lids I fling in a pan of boiling water and boil for a few mins.  This has never let me down and I have jam and bottled fruit that is now 2 years old and it still looks fab!
