Ice Cream recipe needed please

Does anyone out there know how to make ice cream using a tub and the freezer, don't have one of these fancy ice cream makers.
I wanted to use some blackberries I had picked and remember having some gorgeous Blackberry Ice cream somewhere before.

As far as i know you follow the recipe the same way, but instead of putting in ice cream maker you put in tub in the freezer and stir every so often. I think you stir when ice crystals form and you just keep doing this until it is ice cream.

Thats what I thought, but don't actually have a recipe to start with!
If you know of any, or anybody else has one I would be grateful for it.

Here's a couple I found surfing around.

Ingredients
4 cup fresh blackberries
1 cup water
1 sugar
2 1/2 cup whipping cream
1 blackberries for garnish
1 mint leaves for garnish


Directions

Line strainer with two layers of dampened cheesecloth. Set over large
bowl. Combine berries * and water in medium saucepan. Slowly bring to
boil. Reduce heat and simmer gently until soft, about 10 minutes.
Pour into cheesecloth-lined strainer. Let stand until juice has
drained into bowl, about 30 minutes. Gently squeeze pulp to extract
remaining juice. Measure berry juice into heavy medium saucepan. Add
1 cup sugar for each cup juice. Cook over low heat, swirling pan
occasionally, until sugar dissolves. Increase heat and boil syrup 2
minutes. Cool completely. Mix 2 1/2 cups syrup with cream.
Refrigerate until well chilled. Process blackberry mixture in ice
cream maker according to manufacturer's instructions; ice cream will
be soft. Freeze in covered container several hours to mellow flavors.
Garnish with fresh berries and mint leaves.
*Can substitute unsweetened frozen blackberries, thawed.


Servings: 1 servings


Blackberry Ice Cream #2

2-1/2 c. sugar, divided
3 c. fresh blackberries
3 eggs, beaten
1/4 tsp. salt
1 tbsp. vanilla extract
6 c. milk
1 (13 oz.) can evaporated milk

Sprinkle 1/2 cup sugar over blackberries; crush lightly. Puree berries in electric blender; if desired, put through a sieve to remove seeds. Combine eggs, salt, and remaining 2 cups sugar; beat well. Stir in vanilla, milk and blackberry mixture. Pour into freezer can of a 1 gallon ice cream freezer. Freeze according to manufacturer's instructions. Yield: about 3 1/2 quarts

My Ice Cream and Sorbets recipe book says make the mixture, pour into container and freeze, beating the mixture again twice at hourly intervals to break up any crystals and get a smooth texture.   This seems standard for all recipes.   It should be removed from the freezer and put in the fridge for 30 to 45 mind before serving.

Their recipe for blackberries includes apples and Calvados:-
225g fresh or frozen blackberries
2 cooking apples, peeled and sliced
30ml Calvados or 15ml brandy
300ml double or whipping cream
50g sugar

Simmer the fruits gently to soften.  Add a little wter if necessary to stop them burning.  When fully softened, allow to cool completely then stir in the Camlvados or brandy.  Beta the cream till it forms soft peaks then fold in the sugar and then the fruit.   Pour into container and freeze.   

You could also try using their raspberry recipe which is simpler:-
400g tin evaporated milk, chilled overnight
450g raspberries (substitute blackberries?)
100g sifted icing sugar

Beat the evaporated milk till it becomes thick and frothy.  Liquidise the fruit to a purée or rub through a plastic sieve to remove the pips.  Beat the icing sugar intoo the milk and stir in the fruit purée.   Freeze.
