 I am looking for a really good recipe,as near to authentic Italian as possible. ;D

Rosebud, I always use Delia's, don't know how close to the real thing it is, but it is certainly delicious!

This recipe was given me by an Italian friend.  I do it to use the egg yolks up when making Pavlova.  It also works very well with Amaretto instead of cognac.  In summer she omits the coffee and uses orange and starwberry juice with Cointreau to dip the biscuits and a layer of sliced strawberries on top of the biscuits.

500g Mascarpone
5 egg yolks
50g icing sugar

Beat these well to combine flavours and incorporate some air.

Take about 2 cups of strong coffee and add 5tbs cognac or amaretto.

Dip sponge fingers in and then place them in a single layer on the base of a square or oblong dish.   Pour over the mascarpone mixture.  Dust with pure cocoa powder and leave to chill overnight.  Dust again with cocoa just before serving.

The thing about tiramisu is that its a relatively new dessert only invented around 15-20 years ago and there seem to be any number of "Italian" versions both here and in Italy. ;)  So take your pick!

Thank you very much for the help with the Tirimsu, i had a brilliant recipe given to me by a lady in Italy who makes it all the time in their restaraunt had it for a few years and it suddenly disapeared i must have accidently thrown it away when i was doing one of my famous sort outs, something always goes missing, i shall have to wait untill next year to get it replaced, in the meantime i shall try the 2 recipes you have offered thank you.  Rosebud.
