Tim, please could you post Delias sweet cucumber chutney recipe as I have a draw full in the fridge and they are going to turn to slime if I don't do something with them sooooooooooon!

I like to do them in 1/4" dice, rather than slices. And use a little more cu or you'll have juice left over. And do the salting thoroughly - under a good weight - I leave it several hours. I think it helps the keeping quality.

And sometimes add some chopped red pepper for colour.
