Anyone know of a good, tried and tested recipe?
Currently have lots around to use.

Do you actually mean French onion soup, or just onion soup?

For French onion soup, I sweat the onions in butter/olive oil until translucent, then add stock and seasoning (plenty of black pepper), and cook for as long as you consider suitable, eg 20 minutes.  Faites simple ... This was derived from Elizabeth David's French Provicial Cooking.

For Derek's onion soup, add about 30% milk and blend when cooked. Thicken slightly with beurre manie ...

Both of these soups have received family accolades ...

And I have so many onions I am giving them away !!!

mine is similar to Dereks, caramelise the onions  in butter (LOADS of onions!) add some sugar to help caramalise, add a good beef stock, S&P and a slug of white wine, simmer about 20-30 mins. Top with slices of toasted french bread topped with gruyere, put under the grill to melt the cheese, and beware, NEVER eat this in a restaurant whilst wearing a white dress, or you will have to wait till everyone else has left the restaurant cos you are too embarassed to leave! ;D  (Went for the toast and it and half the bowl of soup scooped into my lap! :o :-[)

I actually have another variant on my recipe with milk, and that is to add a teaspoonful (or more) of turmeric, I find it gives a delicious middle eastern flavour ...
