Collecting seeds

Hi, is it worth the effort to collect seeds from the seedheads of this year's vegetable harvest? I keep reading about purchasing seeds from reputable growers etc. But since I'm the frugal type  :D....

If I gather the seeds from, for example, the pak choi I grew during the height of summer that mostly went to seed (lesson learnt  ::))....and plant them now or next year, will they grow?
