I've been making a rumtopf for the last 4 months or so.
One of the strawberries that was floating on the top has gone a bit mouldy  :'(  I confess that i don't stir it up regularly. :-\
I've fished it out, but is the damage done now and it will all go mouldy?

If i bottle it up as per jam into some sterile jars will it halt the process.
Should i boil before bottling?
Should i discard fruit and just keep the liquid?

Any advice welcomed please.

Yes and its tastes fab!!  :P

That's why i'm loathe to bin it, was planning on long drinks at xmas with the syrup and boozy trifles with the fruit.

I'd keep it! Just make sure that the fruit is covered by the booze. Errmm .. and check that the fruit is OK first?

I think if your mouldy strawberry had contaminated it you'd taste it? I'd keep a close eye on it though!

Others will no doubt have other and probably better suggestions.

I agree with grawrc. If the rest of the fruit is covered with rum the mould couldn't grow on it. just keep it all submerged.
Who planted all these weeds?
