CHOCOLATE CAKE

For the cake

2 oz plain cooking chocolate
1 tspn coffee granules
3 tblspn milk
6 oz soft butter
6 oz caster sugar
4 oz potatoes, boiled, mashed and cooled (unsalted)
3 eggs
6 oz self raising flour
2 oz cocoa flour
Salt, pinch
1 tspn baking powder


Filling & topping

1 tspn coffee granules
1 tspn water
3 oz butter
2 oz potatoes, boiled, mashed and cooled (unsalted)
1 oz cocoa powder
10 oz icing sugar


Decoration

24 walnut halves


Oven temperature: 180 C, 250 F, gas mark 4


Method

1.   Melt the chocolate over a pan of hot water, stir in the milk and coffee granules and leave to cool slightly
2.   Cream the butter, sugar and potato until light and fluffy.   Gradually beat in the eggs and the melted chocolate mixture.
3.   Sieve the flour, cocoa, salt and baking powder together and fold into the mixture.
4.   Divide the mixture between two greased 8” sandwich tins and bake for 25 â€" 30 minutes
5.   Allow to cool slightly before turning out onto a rack
6.   To make the filling, dissolve the coffee granules in the water
7.   Place butter, dissolved coffee and potato in a bowl, add the sieved cocoa and icing sugar and beat until smooth.   If a little soft just add a little more cocoa &/or icing sugar.
8.   Use half the filling to sandwich the cakes together and decorate the top with the remaining half and the walnuts
9.   ENJOY

Sounds great but never heard of potato in cake!!! I suppose it makes the cake more moist?

The recipe came from the government during WW 2 & it is the only one my Grandmother ever used.   I use it as a way of sneaking vegetables past the niece and nephew.

The potato not only makes the cake more moist but also improves it's keeping.   I also have several bread recipes that include vegs and pulses.   I just need to get them typed up and posted too.   One of my favourite bread recipes includes cooked chickpeas, they make the bread really moist too & also give it a lovely milkd, nutty flavour.

Will try this it sounds good, i make bread and add potato,s which makes it very light and moist!

When i was young my mum used to make all her cakes with potato flour, they were delicious and so light!
I saw the said flour in Waitrose about 6 months ago which reminded me, with you posting this maybe i need to have a go, the recipe sounds intriguing.
