Bacon & Leek suet pudding

This is a recepie thats being doing the rounds for years in the Durham Coalfield area.

8oz self raising flour
4oz suet
pinch salt
water to bind
4oz chopped bacon pieces
1 large leek chopped into thin slices

Mix flour, suet and salt together. Add water and mix into a dough. Use 3/4 dough to line a 1 pint pudding basin. Fill with chopped leeks and bacon. Roll out remaining dough and use to  make a lid for the pudding. Cover bowl with a pleated piece of greasproof paper then a pleated piece of foil. Use string to secure around the basin and to make a handle for lifting. Place in a steamer and cook for 90 minutes.

Hi Miss Baritone, do you live around this area then? as i live in a little place called Stanley  :o(8 miles from Durham) and i can remember my gran baking this ;)
Tasted good at the time, though now i'm not sure my old stomach would take it :P due to me being diabetic :-/.

Thanks Miss B.   We've still got loads of leeks growing, so your recipe, which is printing at the moment, is about to be handed to my wife, who will hopefully, consider it in the very near future.   My mouth is watering already. ;D ;D ;D

Hi Jethro.
I actually live in Hartlepool, but I'm from Peterlee orginally. Try the recipie. I do make it for my husband who is diabetic. The only change I make is that I use the 'light' vegetable suet instead of the traditional beef suet
