Have 2 well over-grown courgettes that give a proper marrow variety a run for its money!

The missus does not like them stuffed, so any other ideas?

Soup, pies etc?

I have made this myself, and it is nice.

I added some flaked dried chillies, as I like hot food.

Hint:
Americans use them in all sorts of thigs, try googling "Recipes" and "Zucchini" you will get better results that with courgettes.
You can use them in all sorts of things!! I make ratatouille with the oversized ones (I guess you know that? a stew of courgettes, onions, peppers and tomatoes), and you can also make a gratin with them. Just take out the seeds.
They can be watery but you can layer them in a colander and salt them to get some out then rinse and they will be firmer when you cook them.
Oh, yes you can even grate them and use them in cakes and breads! Makes them nice and moist. Make a fruit cake with a cup of finely shredded courgette flesh, it stays moist for ages.
