Tried roasted Beetroot for the first time yesterday, why on earth have I waited so long to try it I do not know, can't wait for the next one.

just wash and pop in oven and roast as you would any other root veg. lovely and earthy flavour.

How can I resist a wink like that cornykev.......Just washed it and wrapped it in foil and dropped it in roasting tin, skinned it when it came out.

One of my all-time favourites is roast beetroot!

I skin them (raw) slice them, add thyme, garlic, rosemary and olive oil. Roast them until tender. I also add raw carrots/turnip etc to the pot.

i roast it in discs,crisp stylie,for the people i feed on the road,they go down  a treat,espeacially with a yoghurty based dip/dressing. also try roast beetroot and haloumi salad,goes great with watercress.we also shove em thru the juicer,takes a while to get used to this one,but it does grow on you,add spme apple and ginger too to sweeten things up a little  x
when the going gets tough,the tough go digging

My mother wouldn't touch beetroot - she could remember the smells emanating from the kitchen as her mother boiled beetroot to death, etc... At the allotment shows, we'd buy beetroot in the sell-off auction afterwards.

It was only in the last couple of years that I have eaten beetroot - roast is delicious. I also made a borscht - unfortunately, I used a Chioggia type (not red, white with pink rings inside) so the colouring wasn't "normal" but it still tasted good.

Yeah,

I boiled my first beetroot at the weekend, but am at a loss as what else to do with it! I know I should peel it. But is it that I should soak it in balsamic vinegar or what? It seems a lot of work to get an end product! I love it though. I don't grow any edible food, I was given it from another site, with a name similar to mine....
