Can anyone help out here please? We had lunch in a pub in Kirkby Overblow yesterday, and one of the puds on offer was Tadcaster pudding. The description was wonderful and included dried fruit and honey. Sad to say we didn't have any as we were only having a light lunch. I've googled it with no joy. Anyone heard of it? I'd really like the recipe.

I've lived in Tadcaster for 22 years and I've never heard of it before! Maybe it was a speciality of the house- maybe contact the pub?

Tadcaster pudding is an old recipe that was popular from the 16th until the 19th century. Unfortunately I no longer have the recipe & haven't made it for years but to the best of my recollection it goes something along the lines of:

Make a suet crust.
Spread with a mix of golden Syrup, milk, chopped currants, raisins, and candied peel.
Roll it up.
Bake it.
Liberally pour over spiced treacle (golden syrup heated with a splash of cider & a pinch of mixed spice) before serving.

The recipe is in the book 'A New and Easy Method of Cookery' by Elizabeth Cleland originally published in 1755 & reprinted in 2005 although no specific quantities or cooking times are given for any of her recipes. The book costs £20-£25 but is available from numerous sources.
There are a few questions over the accuracy of her recipe as at the time a mixture of lard & butter was favoured over suet & golden syrup was still a new product so honey would of been used far more commonly. That just means you can play around with it until you find something that suits your taste though.

I would have expected it to have beer in it as Tadcaster consists of three breweries and not much else!

;D ;D ;D perhaps I'll put it in the custard.
