home produce for the allotment show

Our show has categories for:

*Jam
*Chutney
*Pickle
*Fairy Cakes
*Fruit Cake
*Victoria Sponge
*Scones

I am not going to enter the Jam category as we ate all our fruit/used it for chutney before I had chance to make Jam. I have made a 'rhubarb and jostaberry' chutney and a 'spiced mixed pickle'. The pickle is a mix of loads of veg, with apples, spices, malt vinegar and dates and dark muscavdo sugar. We have made a fruit cake to our usual xmas cake recipe. I hope they like booze though as I have been steeping ours in cognac! I am planning to enter the other categories. The victoria sponge has to be made to a set recipe, but the others can be whatever you like. I am planning to use the standard weigh 2 large eggs and add all other ingredients the same weight for the fairy cakes. For the victoria sponge will they be expecting a standard filling of butter cream icing and raspberry jam? The scones are easy I guess. I am planning to make the victoria sponge tonight and then ice in the morning. The other things I will make in the morning. Any tips on displaying home produce for the show?
