Soft cheeses like Brie and Camembert? How successful is it and are they fit to eat when they're thawed out :-\?

Needs to know, as lots has been bought...........and cant eat it all at once ::)

Soft-ripened cheeses, such as Brie and Camembert, should not be frozen.

They could end up being deadly if you freeze them, but should keep for at least a month in the fridge

I'm interested in this, cos I've routinely frozen little bits of brie which I've then used to stuff chicken breasts & sometimes large mushrooms....where does the 'deadly' come into this please? As I understand it, it will thaw as it was quick- frozen, and if it's used straight away?

i  know they change the rules, but i have frozzen cheese as well and the british cheese council say it can be frozen!

Frozen cheese is fine if its going to be cooked but not if you intend to eat it as it is. No domestic freezer runs at a constant -18, unlike a commercial freezer

it is all to do with friendly and not so friendly bacteria and listeria is the thing to be watching for

The listeria effect..yes but rather like storing, say, cooked rice (which we've been talking about recently)..with a little bit of common sense there's no problem?
