Leeks etc

Lost for ideas tonight - tried this - http://www.bigoven.com/306-Leek-and-Potato-Soup-recipe.html

SO many recipes, but this really worked. My only mods were:

1. More potatoes until the consistency was right for me.
2. Don't mash them - break them up small & leave al dente.
3. Used cream for milk.
4. Added 1/2 tsp Chilli Flakes.
5. Stock was Carrot & Potato water + Chicken cube.

It was TRULY good!

Needed to stretch it for supper last night.

Had 2/3rds  tin of coconut milk in the freezer.

Worked well!

Perhaps I should add:

1. We don't have Marg.
2. A good non-stick pan helps caramelise the Crumble. (As it does for Bangers, Bubble & Squeak, Corned Beef Hash  etc. Yes, I know some don't like the gooey bits!)

3. I used the butter/juice from the Leeks for the sauce.
4. Needed 2 Tbs Flour to make enough.
