sweet potato advice

Just dug up my first crop of sweet potatoes!! Do I need to do anything to them to help them keep, or make them sweet like oca? (I have tried to do a search but all I can find is advice on making slips?).

Thanks manics and thifasmom. Sounds fairly involved - have you managed to follow these instructions and if so, how?! I have dark and cool places to put veg but not dark, hot and humid!

well,ours are in the light, warm dining room, I know light doesn't bother them  :)
