Manuel's pumpkin

Well I am just cutting up Manuel's pumpkin, no rude remarks.  Put some in the oven to roast and must say it looks very good.  Photo below.
Cat watching me, how can I throw it out in the rain, but I have.
Better make some more soup I think.

It tasted good roasted, and I am just looking up a recipe for soup.  I have too many seeds, was going to ask what I do with them, but thifasmom send me your address and will put some in the post, cause I have recycled some and don't know what to do with them.

Think I am talking to myself here.  Can I freeze some of this pumpkin without cooking it as am only half way through cutting it up???  Help.  Where is my soup recipe.  Anyone want any seeds, I normally chuck them, there are too many, don't want my allotment covered with pumpkins.

cook them, barlotti, with some olive oil, salt and pepper, ours tasted great last year  ;D

The pumpkin will freeze beautifully just skin and cut into manageable pieces and freeze in a container or ziplock bag.

I froze my surplus all the time back in the west indies when i would buy 5lbs at a time, i use them cut in biggish chunks in my legume stews. i would cut as i plan to use them and freeze, when time to cooking i would take out what i need from the freezer and put straight into the pot about 10 minutes before turning off the fire.

the seeds i spread and dry on a sheet of kitchen paper for a week then simply fold the paper around the seeds secure with tape then store in my seed box, till ready to use.

Wash the seeds and remove the film and bits of the pumpkin...
Dry the seeds a bit ..........
Coat your pumpkin seeds in a tablespoon of olive oil ........
Sprinkle with salt,pepper or whatever spices you fancy....
Place them on a non stick tray or use baking parchment...
Bake in the oven Gas Mark 1 for about 20 min but check before then to avoid them burning.
I like to use some cayenne powder on mine ;D

I make orange and pumpkin soup.  Its lovely.  Just make ordinary pumpkin soup ie chopped onions, pumpkin and juice and grated rind of an orange.  When cooked whizz in food processor till smooth.  Delish.

If you have a couple of seeds to spare I would love some please
