fave gooseberry recipes

lots of gooseberries any ideas to share please?

Oh..I've got loads to come too....every year I slightly stew some with dollop of honey, sugar and splash of elderflower cordial..and thicken it with corn or potato flour..and that goes down cold with icecream or natural/creek yoghurt or curstard..
Friend of mine makes loads of orange and gooseberry jam..some for me too.. ;)

Now I have heard some using gooseberries with pork replacing apples in many recipies..
And some I leave into bush to ripen fully for eating as they are..yum..almost like eating sweet kiwis.. ;D

Gooseberry rum - like sloe gin - fill container 1/4 sugar, rest gooseberries (whack slightly with rolling pin if very firm) then top up with white rum (the one from the Co-op is ok. Leave for a couple of months or more then strain and bottle.

I do a gooseberry fool too, just layers of custard made wqith Birds custard powder very thick, stewed gooseberries, and cream - at least 2 layers of each.

Tart gooseberry jam - fine on toast, but best of all, take a portion of Brie, a dollop of goosberry jam, stick in microwave on defrost for about 15 secs (I think) or until the cheese starts to run. Eat.

Gooseberries are my favourite fruit  ;D

I intend to try this in a week or two. It might go down well with people who find gooseberry jam a bit sharp (I love it).
