Do i have to use buttermilk to make soda bread please?????

Irish Soda Bread–White Version

Combine:

4 cups flour
1 tablespoon sugar
1-3/4 teaspoons baking soda
1/2 teaspoon salt
1-1/2 cups water
2 teaspoons cider vinegar

Stir; it very quickly becomes dough. Form a round loaf. Place on greased baking sheet. Cut slits in top. Bake 40 minutes at 400° F.

I successfully use a mixture of plain yoghurt and full cream milk (bought from the farm  along the road!) instead of buttermilk, which I can't buy here in France

You can sour milk - just use semi skimmed and add a teaspoon of a mild vinegar like white or cider. Leave it out for about an hour and it will have gone sour and you can use it.

I usually make soda bread on impulse which means I never have buttermilk to hand.  Ordinary milk works fine as it's main purpose is to react chemically with the bicarbonate of soda and produce the bubbles which make the bread rise.

The recipe given above should be fine too.  Just don't be tempted to add sunflower seeds for extra taste and goodness.  They go  bright green as a reaction to the soda.  Bit disconcerting.
