Lamb Chops with sweet potato and lemon

Serves 4

1 tbs olive oil
salt
black pepper
6 lamb chops trimmed of fat
2 red onions finely sliced
2cm peice of fresh root ginger grated
4 garlic cloves sliced
1 red chilli finely chopped
1 tbs ras al hanout
5 tomatoes diced (or 400g tin)
800g sweet potatoes pealed and cut into large chunks
2 tablespoon lemon juice or to taste
1 tbs soy sauce
1 tbs honey
1 cinnamon stick
400ml water

Preheat oven 180c
Heat the olive oil in flameproof cassarole dish over a medium heat
season lamb liberly with salt/pepper and brown on both sides
drain off all but 1tbs of the oil from the pan and cook the onions till softened (5 min)
add the ginger, garlic, chilli and ras al hanout and stir for a few min till fragrant.

Add tomatoes and heat for another 5 min

Return the lamb, sweet potato, lemon juice, soy sauce, honey, cinnamon and water (should be enough to cover chops) and pop lid onto dish and put in oven for 2 hours.

Serve with couscous or steamed rice and a handful of coriander leaves

That sounds right up my street Cambourne7 for no other reason that its got
Ras Al Hanout in the ingredients


I was buying bags from a hampshire spice merchant but now make it in bigger batches that last about 3 months
in an airtight jar.

2 teaspoons ginger
2 teaspoons coriander
1 1/2 teaspoons cumin
1 1/2 teaspoons cardamom
1 1/2 teaspoons black pepper
1 1/4 teaspoons nutmeg
1 teaspoon turmeric
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon hot Spanish paprika
1/2 teaspoon cayenne pepper
Generous pinch saffron threads

If you want a TV snack sprinkle it on plain popcorn instead of sweet its lovely and spicey.

I am going to have a fiddle with this recipie and see if i can adapt if for chicken (dont eat pork or lamb)
