Roasted Veggie Focaccia Bread

If you want a Focaccia Bread with something different in every bite then this is the one for you.!!!!!!!!!

Ingredients

450g Strong White Bread Flour
1 pkt easy blend dried yeast
2 tbsp Olive Oil
150ml warm water
1 tsp salt

2 Roasted Red Peppers
1 Roasted Onion
4 Roasted cloves of garlic
6 Sundried Tomatoes
20 Pitted Black Olives

1 tsp Italian Seasoning
1 tsp carraway seeds

200g Grated Parmesan

Sift the flour and salt into a bowl and stir in the yeast,then add in  the olive oil with some of the warm water,just enough to form a soft dough.(knead for 10 mins)
Blend in the Parmesan cheese then sprinkle on the carraway and Italian seasoning,mould together and set aside in a cling film covered bowl for 2 hours in a warm room.



While your waiting roast the Peppers Onion & Garlic in some olive oil 200 degrees for 30 mins.


Once the dough has doubled in size,Knead again for another 5 mins


skin  roasted veggies and cut into bite size pieces and chop olives and tomatoes.

cover dough in roasted veggies and bind it all together...its messy but well worth it !!!!!!!



Lay bread dough onto oiled tray,sprinkle some more carraway and italian seasoning over the top then drizzle some more olive oil over and finally rip some fresh Basil.
Cook in middle of oven on 190 degrees for 25 mins.


Dont settle for just cooked,make sure its slightly burned as it adds so much extra flavour.


Slice with butter or just rip it apart and stuff ya face.

Enjoy.

I do something similar but after the proving put finger dimples all over the dough and put the veggies in them then brush with a little olive oil.

Looks delicious and the photos are excellent!

Just a small point - I know you are describing the veggies as being roasted, and not the bread as being veggie, but to be truly veggie - don't use Parmesan.  (Sainsburys make a good veggie Parmesan alternative.)

Thanks for the compliment squash64,it is bloomin tasty(or so Jude reckons),the piccies are a learning curve.

As for the "veggie" thingy,this is not meant to be a vegetarian snack,I know it says in the Urban Dictionary
that a "Veggie is a vegetarian...but me being Ol skool , If me mum used to say ,""do you want veggies Gazza""Id reply,knowing she meant vegetables.

I found this on a colloquial language website...............

So, if this carnivore gets around to playing with vegetarian foods Ill title it as such,hope this reply is ok !!!!

Off track a bit but we only use vegetarian gravy- marigold brand it is really nice and it doesn't have the additives in like MSG.

As a vegetarian I was pleased to read that squash64 had highlighted the parmesan issue just so people think about it and the weigh up the options available.
But I think any receipe that helps us eat less meat and eat more healthily is great, I spotted a cookbook on the shelves at waitrose entitled 'Meat Free Mondays' and I thought what a good idea.
I think this Focaccia looks scrummy a nice big chunk with a Chilli non carni would work a treat!

Gazza, this recipe looks lovely, thank you for posting it  I am going to give it a go at the weekend whilst the OH is down at the boat show ;D

PS I also call my vegetables "veggies"  ;)

your so right susiebell,as a Type 2 Diabetic I should be, more than most, endevouring to have fun in the kitchen
with healthier ingredients so that any shared recipes, be they straight out of a cook book or contrived by meself lead to healthier eating ....a point well made by you none the less.


blimey,it was Judes birthday day before yesterday and I made her favourite pudding
and thats got 500ml of double cream in it ...a Lemon and Lime Panna Cotta

and............to make matters worse........... :o


I made some Lemon flavoured Caramel and did a heath robinson Judy for her plate,she said it took her back to days at the funfair with toffee apples...........er and yes.......she only ate a smidgen as it was way too sticky sweet

....I better lock mesef away till I can find some LOW CALodies to cook.... :-\

Unless you are an Australian like me and you use "Veggie" to also mean Vegemite!!! LOL although I would eat it in a foccaccio...  :-X
Anyways that looks delicious and if I can get some peppers I will try it.
