Spicey Coconut Vegetable Curry

Always nice to have a base curry that compliments Fish or Meat and this mild flavoured curry lends itself to both.

INGREDIENTS

50G Dessicated Coconut
200ml Coconut Milk
1 Pint Skimmed Milk
2 Medium Onions chopped small
8oz small carrots skinned and sliced
2 Garlic Cloves Crushed
2 Tsps Dried Thyme
1/2 Tsp Allspice
2 Tsps Ground Cumin
1 Tsp Ground Turmeric
1 Tbsp Grated Fresh Ginger
1 Tbsp Chopped Fresh Coriander
2 Red Chillies Chopped Fine
200ml Vegetable Stock (concentrated)
1 Tbsp Plain Flour
Baby Leeks
Baby Asparagus
Green Beans
Peas
Cauliflower
Salt & Pepper
Oil for frying

Prep All vegetables



In a small saucepan boil together the Dessicated Coconut,Chopped Carrots and milk for 10 minutes then set aside.




assemble spices together along with grated Ginger and Chopped Chillies



Heat a frying pan with a splash of oil,then gently fry off the Onions and Garlic till soft then add the Thyme and Spices,Ginger and Chiillies
and continue cooking for 5 minutes.

Add 100ml of the vegetable stock with the plain flour and cook out for 5 mins on a low heat.



Gradually stir in the remaining vegetable stock,Coconut Milk,and milk and carrot mixture and bring to a medium heat for 5 mins.



Time to add all those vegetables,these are my choosing but I guess what evers in season or what you fancy can be added.



Combine all the contents in the pan and season well,replace lid and let this bubble away on a low heat for a further 15 mins or untill the vegetables are cooked to your liking.




250ml/8fl oz natural yoghurt

½ cucumber, grated or finely chopped,squeezed by hand in a cloth to allow all the juices out.

large handful mint leaves, chopped

large pinch salt,to taste



This allows you time to cook some Fish or Chicken or prep  a Cucumber and Mint Raita side salad.



Serve in a nice big bowl,sprinkle with chopped Coriander along  with some crusty bread or serve with  a slab of Roasted Cod or White fish of your choosing.

That looks em................. so good. I am defo going to give it a try. Only thing is O.H. does not like coconut! so looks like more for me..
