Raw beetroot grated in salad is good. Roast mine too like Tim, but often put garlic, olive oil and balsamic vinegar in mine. Also microwave mine too!  You can eat the tops young as a salad green.

2 or 3 parts grated raw beetroot to one part grated raw apple - earthy, tart, sweet, and a superbly simple salad.  Love it!  :)  :)

Boring - sorry - but purple gravy? - use golden. Pickled? Cup vinegar to 1/2 cup brown (or white) sugar. Aubs, BB? - too late for this year , and I know I have a thing about them, but do try the oriental ones. See my album. And then try Mamta's pickled aubs!! = Tim

Yuck, just can't stand pickled beetroots, love pickled onions and cabbage, but only if it is home pickled....no to shop bought, I have far to delicate a palate  ;).  I have never thought of eating them raw, but I will try for certain this year.  As I said, one of my most fave roots!  :P
