Reading the veg threads, people seem to grow huge amounts of garlic.  I usually divide one head and plant the cloves, getting about 12 new bulbs, and that does us for the year. So how do you all use it? What am I missing? I do love garlic flavour and would welcome some new ideas.....

Dunno how you manage with just 12 bulbs  ;D when the garlic are ready here, first thing I do is fry up a panful with butter and eat them just like that, they're gorgeous.
(Must admit I do try to time it so I haven't got to see anyone the next couple of days  ;D)

Into a stirfry? I can't find the link just now but try a search for garlic scape pesto.
You can't please all of the people all of the time, but you can't upset them all at once either.

We aim for about 60-70 bulbs to last us for the year. I use them in cooking (generally in most things LOL) - curries, stews, stir frys etc. I also make some garlic butter and store in the freezer (chop a bit off as needed).

Thanks for the ideas, garlic pesto and garlic butter are certainly to try - don't know why I didn't think of the latter......

Garlic butter sounds like a good idea, because the flavour of garlic is so rich and delicate early on, but once stored, it does seem to get a bit harsh. Maybe it would preserve its flavour better in frozen butter.

I'll let you know, Pigeonseed - I'm going to make and freeze some with last years leftovers tomorrow.......

I'm going to have round about a hundred garlic planted for next year I already have some in my raised beds, but what I intend to do is have a go at making a garlic and chilli sauce or puree, I've never done this before (being a man) but I have been looking at You Tube for some Ideas the main ingredients seem to be oil, egg whites, salt, cornflour, and a good blender any help or advice appreciated, :)

Wow, Mr Smith, one hundred garlics, I feel a right wuss now.....when I made my garlic butter, it didn't seem very garlick-y so I doubled the quantities. Freezing intensified the flavour, how are you going to store your puree? Just a warning....

                 Like you I intend to freeze the stuff after I have decided what I'm making  I won't have any trouble with any extra garlic I might have plenty of friends that like cooking, :)

I make plenty of chili sauce but mine is tomato based.  You could add garlic if you wanted too but not sure this would be what you were after..

I use garlic in most foods..stocks, soups, pasta dishes, roasts, pickle, etc.
Yes, in butter too,,I haven't used in sweet things though..but that will be only a matter of time... ;D

In previous years I've grown a kilo, but found I ran out, so this year am going for 2kg of Music, £13 a kg incl P&P, that's 180 bulbs, if I go pessimistic and lose a few that's still around 15p a head.

This variety gets a bit ragged around Christmas, but there is nothing stopping you mincing up the cloves and freezing in a tub, and just scoop off what you need until the next years harvest comes in late June/July.

I just used three heads to make a big saucepan of dhal last night... I'm almost out of this years harvest already, got three heads of softneck and two of hardneck plus a pile of elephant garlic cloves (I've taken all the biggest ones for next years seed... Planning on growing about twice as much next year...
